Blancmange - A semi-solid dessert, blancmange is similar to custard but thickened with cornflour or gelatin and set in moulds. In Medieval England, blancmange was a savory dish, a thick gruel made with almonds, milk, rice and chicken or fish- all white or pale ingredients- and hence its French name, blancmange meaning ‘eat white’. Blancmange is often served with a tart sauce or fruit to counterbalance its richness.

Zahtar – A Middle Eastern – mainly Lebanese – spice mixture whose name also means thyme (a Mediterranean wild variety). Ingredients vary regionally, but it should contain, at least, dried thyme, dried and crushed sumac berries, sesame seeds and salt. It is used to flavor fried eggs and Laban or sprinkled on bread. It is also known as Za’atar, Zaatar.

Dough, made using flour and eggs, is rolled into thin sheets, which are blanched, layered with various fillings, and then baked. In Italy, each area has its own lasagne dough and its preferred filling. The dough may be coloured with spinach, when it is known as lasagne Verdi; a softer dough may be using water instead of eggs; or the sheets may have curly edges, which are designed to give a lighter result by trapping air throughout the dish. Lasagne pasta can be bought ready-made in either fresh or dried form. There are various versions of lasagne; lasagne al forno, vincisgrassi, lasgne da fornel. Dragon Fruit - A fruit of central and South American cactus, it has a scaly reddish-pink skin and its flesh is densely packed and bright pink and embedded with lots of tiny edible black seeds. Although the fruit has a rather mild, bland flavour, it is enhanced by sprinkling it with lime juice or sugar. It can be eaten out of hand, pureed in drinks or added to fruit salads. There is also a variety that has yellow flesh.

Chop tomatoes. Heat oil in a non stick pan, add asafoetida, cumin seeds and mustard seeds. When the seeds splutter add onion and sauté. Chop green chillies. When onion is lightly coloured, add green chillies and sauté. Add tomatoes and mix. Add turmeric powder, coriander powder and red chilli powder and mix. Continue to sauté for 2-3 minutes. Chop coriander leaves. Add 1/2 cup water and salt to pan and mix. Let the mixture come to a boil. Tear bread slices and add and mix well. Add coriander leaves and mix. Squeeze the juice of a lemon and add and mix. Serve hot. Variation : we can add green chutney of mint and coriander . insead of tomatoes |
